Sundried Tomato Spread with Pea Pods

Sugar Snap Peas have a great flavor to them, and when paired with this Sundried Tomato Spread the combination makes for a great appetizer or snack.  This recipe is made raw, meaning all of the vegetables and other ingredients maintain their optimum nutrition content! This is a snack I try to make every week, as it keeps very well in the fridge for several days and is great for busy days!

ingredients

1 c cashews

1/2 c pine nuts

1/4 c sundried tomatoes

1/2 lemon, juiced

1/4 tsp minced garlic

fresh pea pods

what to do

1. Soak the cashews and pine nuts in a bowl of water for about 2 hours or until they start to soften. {I’ll usually do this before I leave for work or overnight}

2. Combine the cashews and pine nuts with the other ingredients in a food processor, and blend until smooth.

use the spread as a dip, or split the pea pods and pipe it directly into the pods… enjoy!

* I use the packaged sundried tomatoes, not those found in the jar that are packed in oil
