Oreo Pancakes

OREO PANCAKES?!?

Oh, heck yes! And I’m not kidding. The young, oreo-loving child in me was determined to create something “healthy enough” to indulge in from time to time yet tasty enough to fool my childish tastebuds.

Ingredients

1/2 cup wheat flour

1/2 cup coconut or almond milk (I prefer coconut)

scant 1/4 cup cacao powder or about 3 heaping rounded Tbs

1 Tbs sugar (I haven’t tried them yet with stevia)

1 Tbs coconut oil

1/2 tsp vanilla

1 1/2 tsp baking powder

pinch of salt

What to do…

1. Mix the milk, oil & vanilla in a small bowl. In a large bowl, mix the flour, baking powder, cacao, sugar and salt. Add the liquid mixture to the dry mix and blend. Add a little bit of milk if the batter is too thick. Cook on a griddle or in a large pan like you would any other pancakes. Yum!

Oreo Filling

1 1/2 cup unsweetened coconut flakes

1/4 tsp vanilla

2-3 Tbs coconut milk

2-3 Tbs powdered sugar

Blend the coconut flakes in a food processor until it starts to become coconut butter. Scrape the sides and let it go a little bit longer. Add in the vanilla and sugar. Add the milk slowly. If the mixture is too thin, add a little more powdered sugar. (If you put it in the fridge the mix will harder a little.)

Valentine’s Day Mug Cake

Valentine’s Day Mug Cake. For One.

My husband is missing a sweet tooth. For the several years I have known him, he has never been a dessert person. So if we’re able to have a Valentine’s Dinner together its not likely that dessert will be capping it off. So I’ll be treating myself to this mug cake. It’s quick and simple, and quite indulgent if I do say so myself!

Ingredients

2 Tbs almond butter

1 Tbs cocao powder

1/2 tsp baking powder

1/2 tsp vanilla

3 Tbs water + 1 Tbs flax meal {if you don’t require the recipe to be vegan, you can use 1 egg instead of the water/flax mix}

What To Do

In a large mug whisk together the water and flax meal, and let it sit for 5-10 minutes while you gather the other ingredients. Add in the rest of the ingredients, mix well and place the mug in the microwave for about 1 minute. (I have found 1:10 is the perfect amount of time.) The cake will rise and bubble a bit as it cooks, and fall once you remove it from the microwave. Rarely can I finish the entire thing but I do love every bite!

optional: Before cooking, you can add in nuts, chocolate chips or anything else to make it your own!

This & That

{no Thanksgiving is complete without Appleslices; my grandmother’s secret recipe}

There’s so much to be thankful for this year. My close-knit family, the fact that we are finally moving after living in 2 houses for the past few years (no, I’m not kidding!), my forever smiling and happy little boy, good friends and having a job that I truly enjoy. We work hard all year and try to appreciate the little things in life so that we are not giving thanks just once a year. Here’s a few things that brought a smile to my face Thanksgiving day and throughout the past week…

{My 1st very vegan Thanksgiving…I made Tofurky for myself while my husband and the boys ate ham}

{fun in the fake snow while visiting Santa at the mall}

 {a quick conference about Santa between cousins…}

{deliciously light cupcake cheesecakes with apricot glaze a’la my mom}

{with the exception of packages that will be arriving via mail, my Christmas shopping is pretty much done!}

Happy Holiday Season!!!
